#MiKroger Summit for Content Creators

I recently traveled to Dallas for an incredible event, celebrating Latino content creators, in partnership with Kroger.

#MiKroger Summit featured some amazing speakers and topics, including a session on how to publish a cookbook, with Vianney Rodriguez and Yvette Marquez-Sharpnack and a session on how to create a successful YouTube channel, with Jeanine Amapola.

The event took place at the gorgeous 3015 at Trinity Groves venue and brought together Latino foodies and lifestyle influencers in an intimate setting to learn, network and share a gorgeous, potluck style lunch with Kroger’s social team.

As influencers, we were invited to bring our own dish to pass and were tasked with recreating some of Kroger’s classic holiday dishes.  I chose to create a fresh, vibrant salad to include at the table, featuring some of my favorite ingredients from Kroger.

This gorgeous salad is the perfect side dish to brighten up your holiday table.  With all of the rich, heavy meals you’ll be eating from now until Christmas, this vibrant dish is a great healthy option for any holiday feast.

This sweet and savory salad is a mix of fresh baby spinach, crisp apples, dried cranberries, candied pecans and crumbled queso, drizzled with a gorgeous red-wine or balsamic vinaigrette.

It’s a spin on the apple cranberry walnut salad, but I’m keeping it simple with fewer ingredients and using Kroger’s Private Selection Honey Vanilla Bourbon Pecans and Cacique Ranchero Queso Fresco to bring in a little Texas flair.

The creamy richness of crumbled queso fresco and crunch of the candied pecans pair perfectly with crisp Granny Smith apples, tart dried cranberries and fresh spinach.  It’s the perfect winter salad for any holiday party.

My apple cranberry salad was a huge hit and I love how easy it was to prepare.  Simply grab 5 ingredients + your favorite vinaigrette and you’re ready to eat.

It’s great as a side dish or served on it’s own.  Omit the cheese for an easy vegan option or add grilled chicken to make this dish into a hearty weeknight dinner.

All the flavors of the holidays come together in this light and refreshing apple cranberry salad, topped with crunchy honey vanilla bourbon pecans and a gorgeous, tart vinaigrette.  Enjoy!

Apple Cranberry Salad with Honey Bourbon Pecans

Yield 4 servings

This delicious, crisp winter salad is the perfect light dish to serve alongside your holiday feast.


  • 1 6oz. bag of baby spinach
  • 1 granny smith apple, thinly sliced
  • 1/3 cup dried cranberries
  • 1/2 cup of Private Selection® Honey Vanilla Bourbon Pecans
  • 1/2 package of crumbled Cacique® Ranchero Queso Fresco
  • Red-wine or balsamic vinaigrette


  1. To assemble this salad, add fresh baby spinach to a large serving bowl.  Then add thinly sliced apples, crumbled queso fresco, dried cranberries and candied pecans to the bowl. 
  2. Toss gently until all ingredients are well combined.
  3. Serve with dressing on the side so that your guests can add as much or as little as they like.


This salad is at it's best when enjoyed immediately after serving.  If you plan to serve this dish as a main course, you'll need to double the ingredients.
