These delicious slow cooker shredded pork tostadas came to me after hubby asked for an egg sandwich and we didn’t have any bread in the house.  Instead of bread, I went to the another staple in our house…tortillas.

Hubby absolutely loves tostadas and asks for them all the time, so I knew a gorgeous fried egg on a tostada was the way to go.

Instead of the usual huevos rancheros, I decided to create a heavier dish that would fill him up and satisfy his egg craving.  We had some shredded pork in the fridge, leftover from our family tamalada, so I decided to crisp it up in a pan and place it under the egg.  That way, all the warm gooey yoke will have a place to settle, making these tostadas a little less messy and way more filling.

Tostadas are such a great easy recipe.  We always have tortillas on hand and you can literally top them with anything, from shredded pork, to refried beans and even eggs.

Tostadas are the perfect vehicle for some amazing flavor combinations and are easily adapatable, so you can use whatever ingredients you have on hand.

Carnitas Breakfast Tostada with Avocado Salsa

To counter the richness of the egg yoke and salty pork, I topped these tostadas with a delicious avocado tomatillo salsa.  This adds a wonderful vibrance to the dish and really balances all of the flavors.  It also packs a punch of spicy goodness that really makes the flavor of the pork shine.

If you want and extra kick of acid to brighten the dish, you can squeeze a fresh lime or lemon wedge over your tostadas to intensify the flavors even more.  Just make sure that your tostadas are nice and crispy so they can hold up against all of the delicious sauces and juices you’re about to enjoy.

Suggestions for Customizing Your Shredded Pork Tostadas

Since making these delicious shredded pork tostadas, hubby is already asking me to make this recipe a regular and I can totally see this working as an easy, last-minute recipe.  The perfect dish for a busy weeknight.

I’ve already started coming up with alternates to customize them based on what we have on hand throughout the week.

Some suggestions for customizing your tostadas might include:

  • Try different meats; like shredded beef or chicken, carnitas, chicharrones or crumbled chorizo.
  • Top it with a variety of ingredients; like a fried egg, beans, papas con huevo, avocado slices, creamy Oaxaca or Chihuahua cheese, or pickled jalapeños and carrots.
  • Drizzle on your favorite hot sauce, salsa, crema, lime juice or meat drippings to add an extra layer of flavor.

Shredded Pork Tostadas with a Fried Egg & Avocado Salsa

Yield: 4 tostadas

Shredded pork tostadas topped with crispy pork, a warm and gooey fried egg, spicy avocado salsa and fresh-squeezed lime.  The perfect easy weeknight dish!


  • 4 soft corn tortillas
  • 3/4 pound of shredded pork (see recipe)
  • 4 large eggs
  • 1/2 cup of homemade avocado tomatillo salsa (see recipe) or HERDEZ® Guacamole Salsa
  • Fresh lime wedges for garnish
  • Pork broth / pork roast drippings
  • Olive oil
  • Salt


  1. Add 2 Tbsp of oil to a large skillet.  Warm to medium heat.  Fry one tortilla at a time, adding more oil as needed.  Fry both sides of each tortilla until they are browned and crisp.  They should be hard enough to hold all of your ingredients without breaking.  Let excess oil drip into the pan, then rest tostadas on a plate.
  2. Add 1-2 Tbsp of oil to the skillet (you can also use the natural oil from the pork drippings).  Warm to medium heat and add shredded pork.  Add salt and a small amount of pork broth (from your slow cooker) for added flavor, as desired.  Cook pork until lightly seared and flavorful.
  3. Squeeze fresh lime juice over the surface of your tostadas.  Top with a generous amount of pan-fried shredded pork.
  4. Fry eggs to your liking.  I cook my eggs on medium-low heat until "over easy" (runny yoke) or "over medium"(gel yoke - if you prefer less mess).
  5. Place a warm egg on top of each pork-covered tostada and garnish with a drizzle of avocado tomatillo salsa (or HERDEZ® Guacamole Salsa) and fresh lime wedges.  Add cilantro, pico de gallo or other toppings as desired.
