Churro Ice Cream Float
Happy Float Monday! I’ve got a new flavor in our Latin / Mexican Inspired Ice Cream Float series for you today. It’s the much requested Churro Ice Cream Float!
This float features crisp churros, lightly dusted in cinnamon sugar and soaked in a delicious mixture of cajeta, coke and ice cream.
The whipped cream swirl on top sets the whole thing off and creates the perfect canvas for all of your favorite toppings.
The Churro Ice Cream Float
For this delicious churro ice cream float, I used HEB’s Swoon Dulce Churro ice cream and an icy cold Mexican Coke.
If you haven’t tried them yet, I highly recommend checking out all of HEB’s Mexican inspired ice creams. They have so many great flavors to try.

Dulce de Leche Churro Ice Cream Float
The Dulce Churro ice cream is loaded with smooth caramel flavored ice cream, cinnamon sugar churro pastry bites and lush swirls of dulce de leche.
When I saw it in the aisles at HEB, I knew it was the perfect ice cream for our much requested churro ice cream float.
If you can’t find HEB’s Dulce Churro ice cream, you can use any dulce de leche ice cream or vanilla ice cream. Simply cut churros into bits, mix into the ice cream and top with a generous drizzle of cajeta quemada.

As usual, I kept it simple and used as few ingredients as possible. To make it even easier, I picked up some warm, crispy churros from our local Stripes store.
The churros were tender and light inside and super crispy on the outside, making the the perfect chewy addition to this ice cream float.

TIP: Spike your Churro Ice Cream Float with a shot or two of Kahlua or quality rum for a boozy version of this yummy dessert!
If you don’t have salted caramel, a light sprinkle of kosher salt is amazing and adds the perfect balance to the richness of the dulce de leche in this float!
We also have a few restaurants in our area that sell churros with fillings, like chocolate, strawberry, custard and dulce de leche. Next time, I’ll be trying one of those!
When you create your churro float, you can add any toppings you want, including homemade. You can even make your own churros and dunk them into that creamy mixture of Coke an dulce de leche. Yum!

Churro Ice Cream Float Sundae
As with every ice cream float recipe I’ve created, I’ve added a sundae recipe. That’s because I grew up enjoying my ice cream floats in a ice cream bowl.
Imagine a creamy spoonful of ice cream with all of your favorite toppings. That way you can get the perfect bite!

For this lucious ice cream float sundae, you’ll simply cut the amounts of ingredients in half. That means 1 scoop of ice cream, 1/2 a soda (or less) and as many toppings as you want!

Churro Ice Cream Float
Ingredients
- 1 bottle Mexican Coke
- 2 scoops H-E-B Swoon Dulce Churro Ice Cream
- Whipped cream topping (we used Reddi-Wip)
- Coronado Cajeta Quemada
- Churros or churro pieces
Instructions
- Add 2 scoops of H-E-B Swoon Dulce Churro ice cream to a large glass.
- Pour in 1/2 to 1 full bottle of Mexican Coke.
- Gently mix with a sundae spoon or straw.
- Top with your favorite toppings, like whipped cream, cajeta, hot fudge, cinnamon sugar or a homemade toppings of your choice.
