Low Carb Keto Lunch Ideas – Chicharrón Nachos

I grew up eating cracklins as a kid with my dad. It was one of those snacks (and there were many) that just he and I shared. He loved to try new things and I was always up for trying his latest finds.

Every month, we would make a family trip to the local butcher shop. We had a deep freezer, so my parents would buy in bulk to save as much as possible.

I remember standing with my dad while he pointed at the glass case, trying to decide what to try next. If I got bored while waiting, I would run around the aisle with my brother and sisters looking for all of my favorite treats.

Maybe a little barrel of juice, some pinwheels, licorice or some of those little root beer barrel candies. Remember those? Man, they were good!

Chicharrón Nachos with Spicy Cracklins

One of my favorites snacks growing up was pork cracklins. There were usually just three choices– Regular, BBQ and Hot. My favorite was BBQ. But my dad? He would get the hot ones and drench them in hot sauce. He liked his food crazy hot.

You know that type of dad, the one who wants to melt your face off with his “special chili.” He always shamed you if you couldn’t handle heat. Well, these days I don’t like “melt your face off” chili anymore. It doesn’t agree with my stomach…lol.

Keto Nachos with Mac’s Spicy Cracklins

While I have no interest in competing with anyone, I still love spicy foods, in moderation of course. That’s why I love Mac’s brand cracklins. Their “spicy” cracklins have just the right amount of heat. They’re super crispy, salty, spicy and fatty.

Today, I want to share one of our favorite keto lunch ideas with you. These quick and easy chicharrón nachos have become a go-to in our house. I love meal ideas that don’t take much energy or mental effort and this is definitely one of the easiest.⁠

Just grab your favorite pork cracklins or pork rinds and cover them in all of your favorite low carb toppings. That’s it. SIMPLE.⁠

These chicharrón nachos are the perfect low-carb keto alternative to your everyday lunch and they take almost no time to make.⁠

We used Mac’s Spicy Cracklins, ground turkey (seasoned with garlic, salt, and cumin), shredded cheddar cheese, fresh chopped tomatoes, mashed avocado, sour cream, freshly squeezed lime, and Franks Red Hot Sauce. But you can use any protein or toppings you choose.

Make your nachos American style as we’ve shown here, or top them with all of your favorite fajita ingredients, a slow cooker pollo verde or really…anything you want!⁠ Enjoy!
